Broccoli Cheddar Soup

- 1/2 cup butter (1 stick)
- 1 medium onion chopped
- 4 cloves garlic minced
- 4 tbsp corn starch
- 4 cups low sodium chicken or vegetable broth
- 1 tsp sea salt
- 1/2 tsp ground black pepper
- 1/2 tsp smoked paprika
- 4 cups broccoli florets and diced stems (from 1 large head)
- 1 large carrot grated
- 2 cups heavy cream
- 4 cups grated cheddar cheese
Melt butter in a stock pot over medium high heat
Add onion and sauté 3-4 minutes until softened
Add garlic and sauté until fragrant, about 30 seconds
Add the corn starch and whisk until the it begins to turn golden
Add the broth, salt, pepper, paprika, broccoli, and carrot then bring to a boil. Reduce heat to medium low and simmer for 15 minutes until the vegetables are soft.
Stir in the heavy cream and cheddar cheese, then stir and simmer for another minute until the cheese is melted.
Taste and add more salt/pepper as desired. Serve warm.
