Day 1: Braised cabbage with apples and bacon, Banana bran muffins
Day 2: Broccoli soup w/ Cheddar toasts, Orange slices
Day 3: Beef & Butternut squash stew, Crusty sourdough bread
Day 4: Homemade pizza, Tossed spinach salad with shredded carrot and olives
Day 5: Baked whole chicken, Shaved beet salad, Sauteed kale
Day 6: Chicken noodle soup
Day 7: Baked potatoes w/ toppings bar (steamed broccoli, salsa, sour cream, shredded cheddar)
Notes: Double the batch of muffins and freeze the leftovers. They make a great lunch addition or can be paired with frozen soup for a quick meal. Also plan to make a double batch of broccoli soup and freeze half. We make our own pizza dough and freeze it as well. Remember to grab your freezer items the night before so they can thaw in the fridge and be ready when it is time to make dinner. I only cook with chicken that is on the bone. It is much healthier and environmentally friendly. Plus as a bonus I make bone broth once dinner is over. It is super easy. I let it simmer overnight and then I can use the broth for soup the next day and still have 1-2 quarts to freeze.
Green tips: As it is winter here I am mostly using root vegetables that are available locally. I use mesh and cloth reusable produce bags for all produce (or no bag at all – who says you need one?). Check out the deli area of your grocery store to see if they have olives available, then you can bring our own container to fill to save a glass jar.
