Day 1: Honey lime shrimp over rice, sauteed spinach
Day 2: Basic whole roasted chicken, Roasted golden beets and carrots
Day 3: Thai curry soup w/ shredded chicken
Day 4: Homemade pizza, Tossed Salad
Day 5: Superbowl Chili
Day 6: Pasta with red sauce (frozen from last summer), steamed broccoli
Day 7: Tacos, Guacamole
Notes: I know I planned chili last week, but I completely forgot that my husband likes to make his version for the Superbowl every year. It takes him a while to make, but well worth it! Add whatever toppings and sides you like. Personally I like shredded cheddar and sour cream.
Green Tips: Put together a grocery shopping kit. My current kit includes 4 reusable bags (I prefer canvas since they are strong and washable), reusable produce/mesh bags & cotton bulk bags, glass or plastic containers for bulk items like flour, beans, rice, nut butters, and oil; silicone containers that I mentioned last week for meat, Bee’s wrap for cheese. I place all of my containers and bags into one reusable bag and store it in the car. Once I unpack my groceries, I immediately return my bags and extra containers to the trunk so I don’t forget them next time. I have rotating items so that there are extras when others are in use. You certainly don’t have to use the products I linked above and you may not yet be to the point of buying most items in bulk or even have access to a location to do so, but most can at least start with reusable bags. The containers and bags don’t have to be fancy or cost a lot of money either. They could simply be an old pickle jar or used gelato container (I won’t tell you how many of these I have). You will curate your own storage vessels over time. I have plans to do a more in depth blog post about grocery shopping so hang tight!
