Day 3: Pepper crusted beef tenderloin, Roasted pesto potatoes
Day 4: Squash pancakes, Frozen fruit smoothie with muskmelon and strawberries
Day 5: Tuna salad, Carrot and radish sticks
Day 6: Potato and sweet pepper soup (frozen supply), Zucchini muffins (frozen supply)
Day 7: Vegetable curry with chickpeas, greenhouse spinach, carrots, and sweet potatoes

- Homemade pesto
- Frozen diced bell peppers
- Potato and sweet pepper soup
- Zucchini muffins (last ones that I froze from summer!)

Notes: Pineapple and Cheers
Pineapple is a rare find in my house. This tropical fruit is never going to grow in Wisconsin. That means as a result of my quest to eat local, it has been permanently banned from my shopping list, along with avocados, mangos, and bananas (see my birthday post from April). But, we happened to be gifted a pineapple this holiday season and I’m using it to satisfy my daughter’s cravings. Ever since my dad made us rice bowls with pineapple this past summer, she has been begging me to make them too. I don’t have a recipe for you, but Poke bowls don’t really need a recipe. Traditionally, Poke (pronounced POH-kay) means to cut up chunks of raw fish, place over rice, add vegetables, and top with an Asian sauce. We are skipping the raw fish and adding some sweet with the pineapple. You can simply flavor with soy sauce, or use another premade sauce like Hoisin. Poke is a super adaptable meal and this gifted pineapple is the perfect thing to use as a “treat” to help us ring in the new year!
With that, I want to toast to my readers. I’ve been thinking about what I’m going to do with this blog next year and decided to add more content surrounding the topic of plastic. Plastic continues to be a pervasive problem in our environment, and in fact is even worse since the beginning of the pandemic. I made a couple of updates to the Green Life Philosophy 90 Day Plastic Free Challenge and am committing to provide you with more zero waste living tips in the coming months. So cheers to health, happiness, and less plastic in 2022!
