Notes: I need to use up some meat in our freezer so we are having beef twice this week. If you don’t want to eat that much beef, you could substitute baked chicken. This week my son has a Cub Scout potluck with the main dish provided by the Pack so I didn’t plan a full meal. Green Tips: Speaking of going out to eat… that is a rare treat in our household. Unless we are traveling, we usually only go out to eat five times per year, for each of our birthdays. Just the thought of going out to a restaurant with my three kids makes me ill! All of the bathroom trips, getting my three year old to stay in his seat, the unhealthy kids meals, not to mention the cost! To me it just isn’t worth it. And there is so much packaging and waste that goes along with fast food, it makes my head spin. If we need fast food, I will go to the grocery store deli/prepared foods area. There is soup, salad, plenty of hot dishes, and a good selection of prepared foods to reheat. Then I can bring my own containers. Our family favorite is tamales. If you go to a restaurant, be sure to refuse a plastic straw and bring your own container to take home any leftovers. I keep containers in our car as part of my grocery store shopping kit, so I am prepared.
