Day 1: Tex Mex beef casserole
Day 2: Cashew chicken, Orange slices
Day 3: Shrimp, orange, and arugula pasta salad
Day 4: Homemade pizza, Tossed salad
Day 5: Steak, Roasted root vegetables w/ garlic thyme dressing, Green salad, Apple crisp
Day 6: Chili, Green salad
Day 7: Salmon with pesto, Sauteed kale
Notes: I am craving fresh vegetables so we are having lots of salad this week. I don’t use store bought dressing. I usually make my own with olive oil and either fresh lemon or lime juice plus a little salt and pepper. You could also just use oil and vinegar. We rarely have dessert, but apples will not be available (from the US) soon and I wanted to make one last crisp.
Green Tips: I was traveling for work last week and as I was walking around in places that I don’t usually go and creating more waste than I usually do. I began to get discouraged. When you are home it is so much easier to have your systems in place and things at your fingertips that aren’t disposable. My eyes were opened to the garbage problem years ago. It was like I had previously been looking at life through a different lens and all of a sudden the world took on a new color and I could see all of the mass consumption and waste being created all around me and the destruction of our environment. It was really overwhelming because this massive problem didn’t seem to have a solution. So I started to focus on what I could do, not on what I couldn’t. And I took baby steps to improve my own lifestyle. So, while I was in the airport last week and at a hotel I tried to focus on what I was doing and the small contributions that I was making, like bringing my own insulated cup with me so that I could fill it with either hot or cold beverages wherever I was. I also brought a small bamboo spork so that I wouldn’t have to use disposable cutlery. Green Life Philosophy is meant to inspire you, not discourage you. So if you feel like anything on here is too much, or you are overwhelmed by what you see, read, and hear on social media and in the news, then take a step back, breath in deeply, and think of small things that you can do.
