Day 1: Baked cod with lemon & butter sauce, Pesto orzo, Apple slices

Day 2: Kielbasa hash, Green fruit smoothie

Day 3: Spanakopita, Greek Salad, Hummus

Day 4: Homemade pizza, Tossed salad with carrots and olives

Day 5: Grilled steak, Apple beet slaw, Sauteed asparagus

Day 6: Crock pot cauliflower cheese soup, Celery and carrot sticks with ranch

Day 7: Baked potato bar with steamed broccoli, shredded cheddar, salsa, sour cream

Notes: The spanakopita recipe takes longer to prep and bake so plan accordingly. It makes such a great Greek meal, though, when paired with the salad and hummus. So worth the extra time! The rest of the meals are quite simple and will come together in under 30 minutes (except for the pizza dough rise and bake time and Crock Pot cooking time for the soup).

Green tip of the week: Have you heard of Terracycle? You can sign up for their recycling programs to salvage many items that you can’t set out at your curbside. Through their free programs you can send in items such as Brita water filters, snack bar wrappers, toothbrushes, razors, Go-Go Squeeze pouches, and chip bags. You can also purchase Zero Waste Boxes to send in just about anything and they will find a way to recycle it. I will warn you, it can be cumbersome to sort all your garbage and spend the time requesting labels and taking it to the post office. Some of their programs also have wait lists. So, my rule of thumb is to first try to eliminate all the garbage in the first place and then use Terracycle to help deal with the leftovers to avoid so much going to the landfill.
