
Day 1: Chicken and asparagus stir fry served over rice

Day 4: White beans with bacon, Warm applesauce with cinnamon and nutmeg

Day 7: Baked salmon, Mediterranean spinach and orzo salad
Notes: Did you know that right now you can walk out into your yard or nearby park and collect your dinner? Some of the most hated “weeds”, are actually quite delicious. Most think that dandelions are pesky, but if you are like me (and the bees!), these little rays of sunshine are wonderful. The yellow flowers make me smile and the tender young greens are tasty. The earlier you harvest them, the better since the larger, more mature leaves tend to be a bit bitter. You can eat the entire plant; leaves, flowers, and roots. Wild violets are another delectable yard/woods plant. The leaves are a great addition to any salad and the flowers add a fancy touch (both are edible). Both dandelions and violets will give you a healthy dose of vitamins A, C, and K. You can also easily find clover in your yard, nearby park, or woods, however this one is an acquired taste and it may be best to tuck this info into the back of your mind in case you find yourself lost in the wilderness and desperate for a bite to eat. No matter where you collect your fodder, it is super important to make sure you are not foraging from an area that has been sprayed with chemicals. The last thing you want is a mouthful of glyphosphate. Other than that, just add some shredded carrots, radish, and your favorite dressing and you have a wonderful spring salad! You can check out my lunch in the picture above. The kids helped me pick the dandelion and violet greens and flowers right from our lawn. Then we added cannelini beans, green olives, and some shredded carrot. I mixed some olive oil with fresh squeezed lemon juice and a dash of salt for the dressing. I’ve never seen my family so exited to scarf down a salad!
