Notes: Summer technically ends on September 23rd, so I’m sneaking in one more serving of summer salad this week. I’m using cucumbers from my garden, but if you have CSA vegetables, you can substitute with a pepper (hot or sweet) to get some crunch and skip the corn if you don’t have it. The quinoa salad has some similar ingredients so you can be sure to use up all that feta. I only make eggplant parmesan once per year since it is a time-consuming recipe, but I have extra eggplant from our garden so I plan to double the recipe and freeze half in an aluminum baking pan. I will only be using eggplant, but the recipe does call for zucchini if you have it.
GLP Tip of the Week: Did you know that it is illegal to throw away your electronics in about half of the United States, Wisconsin included? I only recently became aware of this, so I am guessing there are others out there who are also not aware. Electronic waste (called e-waste) can contain harmful toxins, including lead and mercury. So, to prevent leakage of these toxins into the environment, they must be disposed of safely. The companies that deal with e-waste will break down the products into plastics and metal to recycle and then dispose of any chemicals properly. Most communities these days have an electronics recycling day. Sometimes you have to pay to recycle large items like old TVs and computers, but there are other places that will collect these items for free. Best Buy has a program and often larger cities will allow you to bring electronics directly to their recycling center. Visit call2recycle.org to find a place near you that accepts rechargable batteries and cell phones. In order for my family to participate, I’ve found that it is easiest to set up an electronics recycling center our home. I put a large box in our garage to collect the smaller electronics and stack any larger ones nearby. Once the box is full, figure out when your next recycling event is. Make sure to mark it on your calendar!
CSA Notes: Here is how I am using my share this week:
- Carrots: 1 grated over tossed salad, 2 chopped for quinoa salad, 2-3 sliced and sauteed in butter or olive oil to serve with chicken. The rest can be stored or cut for sticks for lunch
- Onion, Red: 1 small slice for quinoa salad, 1 small slice finely diced for pico de gallo, the rest goes into Italian sausage with peppers and onions
- Tomatoes: 1-2 diced for pico de gallo (combine tomatoes with finely chopped onion, cilantro, juice from 1 lime, and salt), 1 cut up for tossed salad, 1 in summer salad. Any left can be sliced to top hamburgers or eaten sprinkled with salt for breakfast or lunch
- Brussels Sprouts: lemony brussels sprouts
- Beans, Green: 1/2 steamed and served with Italian sausage dish, 1/2 cut into 1 inch pieces for summer salad
- Kale, Green Curly: removed from stems, chopped, sauteed in olive oil until wilted and tender, then sprinkled with salt. Serve with eggplant parm
- Eggplant, Globe: eggplant parmesan
- Pepper, Carmen Sweet Italian: summer salad or quinoa salad
- Pepper, Anaheim (green, hot): Italian sausage with onions and peppers
