
Day 1 : Broccoli soup with cheddar toasts
Day 2: Ground pork with cabbage and apples
Day 3: Homemade pizza topped with delicata squash, goat cheese, and carmelized onions, Tossed salad
Day 4: Pan-roasted chicken with lemon-garlic green beans and potatoes
Day 5: Potato and sweet pepper soup
Day 6: Baked lemon butter cod, Sauteed broccoli raab, Raspberries with cream
Day 7: Sesame noodles with totsoi
Notes: Totsoi is very similar to bok choy so I am substituting in the noodle recipe this week. You can use rice noodles or soba noodles if you are gluten free. Peppers are not in season for long in the US so be sure to double your potato and sweet pepper soup to freeze for winter. While you are at it, you might want to pick up a few more peppers at the store and chop them at the same time, then freeze in bags to add to eggs, stir fry, and soup in the winter. Hot peppers can be chopped and frozen to add to chili.
GLP Tip of the Week: Did you join the Global Climate Strike last week? An estimated 4 million people worldwide participated. That is amazing and fills me with hope! If you were not aware of the strikes and what they were about, my tip this week is to educate yourself. Here is an article in the Wall Street Journal about the strikes. And here is a post I wrote at the beginning of this year highlighting some of the climate problems. This is really cliche, but knowledge is power!
CSA notes: Here is how I am using my share this week
- Potato – Gold: Use 3-4 medium size in the potato soup. Use all the small ones in the pan roasted chicken
- Beans, Green: pan roasted chicken, saving a few for school lunches
- Onion, Yellow: you will need to buy another onion or two this week. I am using it in broccoli soup, ground pork/cabbage, caramelized on top of pizza, and in potato/pepper soup
- Pepper, Anaheim (green, hot): One on tossed salad and one chopped and added to sesame noodle dish
- Tatsoi: sesame noodle dish instead of bok choy
- Broccoli: broccoli soup
- Cabbage, Green – mini: it is pretty small so use the whole thing in the ground pork recipe
- Delicata Squash: baked at 350 degrees until fork tender then scrape out flesh and use instead of pizza sauce. Dollop with goat cheese and top with caramelized onions before baking pizza
- Pepper, Sweet Bell Red: I received 6 small peppers and will use them all in the potato/pepper soup
- Lettuce Head, Red Leaf: tossed salad
- Broccoli Raab: roughly chopped, sauteed in olive oil and lightly salted. You can add red pepper flakes if you like a little spice.
