Notes: Winter Slump
Two months from today my spring CSA begins. I absolutely cannot wait! That is because I have officially hit my winter slump. The recent super cold temps and unrelenting snow have pushed me over the edge.
Food wise, I find myself repeating more recipes and trying to keep the kids interested in root vegetables. I am getting bored with the dull winter veggie colors. Several times I have found myself drooling over out of season vegetables in the grocery store. So far I have resisted. I made a pledge to eat the seasons and I am sticking with it.
But I have a confession – I cheated today. A friend and I escaped to a spa for a bit and I splurged on a watermelon, cucumber, mint smoothie. I have no regrets! When I got home to cook supper I was refreshed and ready to recommit to seasonal eating.
Luckily, I do still have a bit of frozen stock from last summer to stretch out over the next two months, including peaches, corn, berries, and tomatoes. These are the things that keep me going this time of year with a reminder of the growing season ahead.
One other way I am trying to get my self through this slump is to experiment with my dehydrator. I’ve been taking citrus, slicing it super thin, and drying them out. So far I have tried oranges and grapefruits. These slices will keep for up to a year in an airtight container, but I haven’t been able to save any up yet as they are very popular! We drink a lot of tea in my household and they are perfect to stick into your mug to infuse a nice citrus flavor and burst of vitamin C (see pictures below). I’m hoping to get more stored up to use when citrus season is over. I have also tried candied orange peels which has been a fun snack to have around. They are amazing dipped in melted dark chocolate! Next up is beef jerky.
