We are in prime greens season, so that means greens with every meal! Lettuce, chard, radish greens, turnip greens, carrot greens, bok choi, spinach. They are all so good and nutritious!
I used to hate greens because I didn’t know how to use them other then making salads. They tended to wilt or get slimy in my fridge before I could eat them all up. Now I’ve figured out how to stuff greens into so many different meals. Sometimes they are hidden away in meatloaf, lasagna, or a smoothie. Other times they are sautéed and served with a protein of some sort. They wilt magically into soups and stews. Oh, and I still enjoy fresh salads with whatever toppings I can find (presently sliced radishes, olive oil, and a splash of lemon juice or balsamic vinegar).
Whatever you do, pack the greens in while you can. If you are a seasonal eater, these are the foods you will be craving six months from now!
