Day 1: Pasta alla Norma, Cantaloupe cubes with fresh mint

Day 2: Pan-roasted chicken with garlic lemon green beans and potatoes

Day 3: Homemade pizza, Tossed salad

Day 4: Kielbasa hash

Day 5: Thai curry soup with boi choy and broccoli

Day 6: Italian lentil salad, Apple slices

Day 7: Fried rice with peppers, carrots, and onions

  • Whole chicken cut up

Into Storage:

  • Chopped bell peppers: Freeze in quart sized zipper bags. These will be added to soups, stir fry, and egg scrambles in the winter
  • Diced onions: Freeze in quart sized zipper bags. Dicing an extra onion or two while I am already chopping veggies helps so I can put together easy meals later on. The onions can be easily portioned out frozen to add to skillet dinners, slow cooker meals, or casseroles.
  • Shiso: trying this in the dehydrator to make tea

Notes: Fall & Winter CSA

Happy first day of fall! If you missed out on a summer farm share, it is not too late to still get local produce through the end of the year. There are still some farms participating in community supported agriculture (CSA) that are enrolling members now. Take a minute right now to look for a fall or winter CSA.  Not sure which CSA is right for you? Well, you are in luck! I have a whole article on How to Choose a CSA. After reading, head to the Fairshare CSA Coalition or Local Harvest website to find the perfect farm. I’m looking forward to cooking with winter squash, potatoes, and other root vegetables in the coming months!
