Beef and Barley Stew

A hearty stew for those cold, wet days. Tender beef, root vegetables, and barley will fill your belly.

Ingredients
  

  • 1 pound beef stew meat or round steak cubed
  • 1/4 cup pearl barley rinsed and drained
  • 1 & 1/2 cups diced onion
  • 1 turnip peeled, cut into 1/2 inch cubes (1 and 1/2 cups)
  • 2 cups diced carrots
  • 1 cup thinly sliced celery or grated celeriac
  • 2 cups low sodium beef broth
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 2 cloves garlic minced
  • 1 bay leaf
  • Salt to taste

Instructions
 

  • Salt the meat. Place in the bottom of a crock pot and add the barley on top.
  • Add onions, turnips, carrots, celery, and spices.
  • Pour broth over the top.
  • Cook on low 9-11 hours
  • Remove bay leaf before serving
