The Plan:

Day 1: Sesame noodles with totsoi

Day 2: Easy chicken Caesar salad, Muskmelon chunks with fresh mint

Day 3: Homemade pizza

Day 4: Beef pot roast, Green beans almondine, Sweet corn on the cob

Day 5: Pasta alla Norma

Day 6: Out to eat for a birthday celebration!

Day 7: Roasted red pepper hummus (add roasted peppers to regular recipe) plate with tomatoes, peppers, cauliflower, and pita for dipping

This meal plan was curated using local foods that are in season now or preserved during the peak growing season in the U.S. Midwest. The plan is an exact replica of what our family is eating this week unless we are out of town. Meal plans are developed using whole foods and my meal planning system (click here!) and are meant to be healthy and easy to prepare. Most recipes will take no more than 30 minutes of active cooking time. Occasionally meals may require all day slow cooking, advanced prep, or some oven time. Recipes are provided when available. Out of Storage: (preserved when in season and coming out of my root cellar, freezer, canned, or dehydrated stash)

  • Diced tomatoes (freeze)
  • Broccoli (freeze)
  • Cauliflower (freeze)

  • Green beans (freeze)

CSA Breakdown:

For those of you also using Crossroads Community Farm, here is a breakdown of how I will use each piece of produce this week. See the first CSA post from this season for details of how I structure the plans.

1 Lettuce, Romaine (1.0 head): chicken Caesar salad
1 Tomatoes (1.0 increment): Caesar salad, pasta alla Norma
1 Beans, Green (1.0 bag): green beans almondine to serve with pot roast
1 Eggplant, Globe (1.0 count): pasta alla Norma
1 Tatsoi (1.0 head): sesame noodles
2 Pepper, Red Sweet Carmen (1.0 count): Roast whole at same time as roasting eggplant for pasta alla Norma. Remove skin and seeds, then add to food processor when blending the chickpeas for hummus
1 Cauliflower (1.0 head): Cut into florets to serve with hummus
1 Muskmelon, Sugar Cube (1.0 count): Cut into chunks to serve with Caesar salad. I may also add some to Sangria this week
2 Pepper, Red Bell (1.0 count): Cut into slices to serve with hummus
1 Garlic, bulb (1.0 count): sesame noodles, pasta alla Norma, hummus. Save rest for future
5 A1 Corn, Sweet (1.0 count): boil whole cobs until just tender then spread with butter and salt and serve with pot roast
