The Plan:

Day 1: Potato and sweet pepper soup, Autumn Waldorf salad

Day 2: Grilled steak, Balsamic honey glazed carrots (recipe coming soon), Roasted fennel with garlic and herbs

Day 3: Homemade pizza, Tossed salad with tomatoes

Day 4: Pork chops with apples and pears, Lemony brussels sprouts

Day 5: Tatsoi salad with peanuts and garlic sesame dressing,

Day 6: Baked potato bar

Day 7: Pepper and onion fajitas

This meal plan was curated using local foods that are in season now or preserved during the peak growing season in the U.S. Midwest. The plan is an exact replica of what our family is eating this week unless we are out of town. Meal plans are developed using whole foods and my meal planning system (click here!) and are meant to be healthy and easy to prepare. Most recipes will take no more than 30 minutes of active cooking time. Occasionally meals may require all day slow cooking, advanced prep, or some oven time. Recipes are provided when available. I sincerely hope this will help with your own meal planning!

  • Onion and pepper packs (I freeze slices into gallon bags and use to make fajitas and other dishes in the winter)

1 Fennel (1.0 bulb): roasted to serve with steak
1 Scallions (1.0 bunch): Baked potatoes, Tatsoi salad
1 Carrots (1.0 bag): potato & pepper soup, Balsamic honey glazed carrots, Tatsoi salad
1 Tomato, slicer (1.0 count): Tossed salad
1 Tatsoi (1.0 head): Tatsoi salad
1 Potato – Red (1.0 bag – 3 lb): sweet pepper soup, Baked potatoes
1 Lettuce, Romaine (1.0 head): tossed salad

1 Onion, Yellow (1.0 count): Potato & pepper soup (you will need more onions if you want to make fajitas too this week)
